Database record extraction via direct entityType interpolation

SQL injection in OpenMetadata 1.4.4 and earlier allows remote authenticated users to extract database records via entityType. DocStoreDAO.listCount inserts the request's entityType value directly into SQL text instead of binding it as a parameter. A low-privileged bearer token reaches /api/v1/docStore, enabling reads of stored user data such as password material and JWT tokens.
